Peach & Pork Curry ****1/2 8/96

2 tablespoon flour
2 teaspoon curry powder
1/4 teaspoon salt
1/2 lb pork tenderloin
sliced 1/4 to 1/2 thick
1 tablespoon oil
3/4 cup apple juice
8 green onions; cut 1/2 inches
1 peach; thinly sliced, peeled
2 tablespoon peach preserves or jam
2 cup hot cooked rice
1/2 teaspoon adobo
1 tablespoon butter

In a medium bowl, combine flour, curry powder and salt. Add pork; toss to coat. Heat oil in a skillet over medium high heat until hot. Add pork mixture; cook and stir 5 to 7 minutes or until browned and no longer pink. Reduce heat to medium low. Add apple juice, onions, peach, and jam to pork mixture; cook and stir until mixture is thickened and peaches are warm. You may want to thicken this a little with some cornstarch and water mixed together. Make the rice up and add butter and adobo; stir. Serve pork mixture over the rice.(This would be good with some toasted almonds on top. 6/05)
