Chili Corn Bread **** 6/95

1 1/2 sticks butter, softened
1 cup yellow cornmeal
6 tablespoon sugar
4 large eggs
1 1/2 cup flour
1 tablespoon baking powder
1 1/2 teaspoon salt
15 oz can cream corn
4 oz can green chilies
2/3 cup shredded cheddar

Preheat oven to 375 degrees. Spray Pam on a 9 inch square baking pan. Using electric mixer, beat butter, cornmeal and sugar in a large bowl. Add eggs one at a time, beating well after each addition. Mix flour, baking powder and salt in a small bowl. Add to batter and stir. Mix in corn, chiles and cheese. Pour batter into prepared pan. Bake 55 minutes. Cool slightly. Cut into squares.

Yield: 12 servings
