Hook's Creamed Turkey 2/97

1 1/2 cup cooked chopped turkey
2 tablespoon flour
2 tablespoon butter
1 cup chicken broth
1/2 cup half & half
1 teaspoon tarragon
salt & pepper to taste
louisiana hot sauce
rice or toast
1 can peas & onions; optional
Heat butter in a saucepan; add flour and cook for minute. Gradually add broth; cook until slightly thickened and smooth. Add turkey, tarragon, salt, and pepper. Simmer for about five minutes. Add half & half, simmer for 2 minutes more. Add hot sauce to taste and check seasonings. Serve over toast or rice. This is EXCELLENT served over bite sized puff pastry. Suggest trying this over dumplings or biscuits
