Tomato Pie #736 5/05

4 tomatoes; sliced
10 fresh basil leaves; chopped
3/4 cup green onion; chopped
1 9 inch deep dish pie shell; pre-baked
1 cup grated mozzarella cheese
1 cup grated cheddar cheese
1 cup mayonnaise
salt and pepper
Place the tomatoes in a colander in the sink in 1 layer. Sprinkle with salt and allow to drain for 10 minutes. Layer the tomato slices, basil and onion in the pre-baked shell. Season with salt and pepper. Combine the grated cheeses and mayonaise together and spread on top of the tomatoes. Bake for 30 minutes at 350°F or until lightly browned. Cut into slices and serve warm. This went well with some fried Italian sausage.
