Monteray Jack Wafers #681 2/04

1 lb monteray jack cheese
Cut cheese into 1/4 inch slices, then into circles or squares approximately 1 1/2 inces across. On a nonstick cookie sheet, space at least 3 inches apart. (This is important as they spread while baking. Bake 10 minutes at 400°F . Do not overbake; remove from oven immediately and allow to cool. Store wafers in airtight cookie tin. They are light and lacy and fabulous with cocktails, soups, and salads. This recipe works only with Monteray Jack Cheese. If you use foil on the baking pan, be sure to spray it with Pam or you will NEVER get them off.
