Cheese Crisps 3/99

1 cup flour
1/4 teaspoon salt
1/4 teaspoon crushed red pepper (or more)
1 stick unsalted butter(4 oz.)
3 cup sharp cheddar; grated
1 teaspoon thyme; heaping
1 cup rice krispies

Prehaeat oven to 350. In a mixer, combine flour, salt, and red pepper. Add softened butter, cheese and thyme and mix just until a dough forms. Gently fold in the Rice Krispies. Working with a scant Tbsp. at a time, roll the dough into balls. Flatten the balls into 1 1/2 inch rounds. Place rounds on cookie sheets that have had a spray of Pam. Bake for about 15 minutes, or until firm to the touch and just beginning to brown. Let cool on the sheets for 2 or 3 minutes, then transfer to wire racks to cool completely. Store in airtight container.

Yield: 24 pieces
