Beer Batter #727 2/05

10 oz flour
1/2 teaspoon baking powder
1 large egg; separated
8 oz michelob beer
salt to taste
Whisk together the flour and baking powder. Add egg yolk and beer all at once and whisk until combined into a batter. Add salt to taste. Chill until ready to use. Just before service, whisk the egg white into soft peaks and then fold into the chilled batter. Dredge fish or shrimp in flour and then into the batter. Lower into heated oil to deep fry 3-4 minutes or until golden brown.
