Pot Roast & Veggie Sandwiches #718 1/05 *****

3 pound beef roast
2 stalks celery; course chop
2 carrots; course chop
1 large onion; quartered
3 beef bouillon cubes
1 tablespoon kitchen Bouquet
2 cans beer
Put some of the veggies on the bottom of the crock pot. Add the roast, fat side up. Add beer, veggies, bouillon cubes, and Kitchen Bouquet. This may not hold all of the beer, just come to within an inch or two of the top. Cook on high for about 6 hours. Remove meat and let rest for about 1/2 hour. Strain broth and thicken some of it for gravy. Cut meat against the grain. Dip in some of the gravy and put on sandwich with some of the veggies.
