Hush Puppies ****1/2 10/97

2 cup self rising corn meal mix
3 tablespoon self rising flour
3 tablespoon minced onion
1 teaspoon onion powder
1 1/4 cup buttermilk
1 egg; slightly beaten
1 vegetable oil for frying

Combine corn meal, flour, and onion in a large mixing bowl. Gradually beat in buttermilk and egg. Set aside for five minutes; do not stir. Meanwhile, in a large skillet, heat 1" oil to 400 degrees. Drop small spoonfulls of batter into hot oil. Fry until golden brown, turning occasionally. Drain on paper towels. Serve hot. Serve these as a snack and use Hush puppy dip with them (#726).
