Bourbon Balls **** 12/97

6 oz semisweet chocolate pieces
1/2 cup sugar
3 tablespoon light karo
1/3 cup bourbon
7 1/4 oz package vanilla wafers; finely crushed
1 cup walnuts; finely chopped
1/4 cup sugar for coating; in a bowl
1 cup coconut; optional
Melt chocolate in a double boiler. Remove from heat and stir in 1/2 cup sugar and the corn syrup; blend in bourbon. Add crumbs and nuts and blend well. Shape quickly into 1" balls and roll in some sugar. Ripen in airtight container several days before serving. You can 1 cup coconut to the mixture if you like.
