1/2 cup sliced almonds
1/4 cup flour
2 teaspoon lemon zest
1 teaspoon coriander
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon pepper
1 egg; slightly beaten
In a blender process almonds with flour until ground. Combine with remaining spices. Dip chicken in egg; coat with almond mixture; fry over medium high heat until browned, about 4 minutes per side. Reduce heat to low; cook, turning occasionally, until no longer pink in center, about 10 minutes.
Yield: 4 servings
