Three Cheese Macaroni **** 2/97

2 tablespoon butter
1/4 cup flour
1 cup milk
1/2 cup chicken broth + 2 tb.
1 teaspoon dry mustard
1 teaspoon worcestershire sauce
14 oz can diced tomatoes; drained
1/4 teaspoon salt
1/4 teaspoon pepper
4 oz shredded cheddar
4 oz shredded jack cheese
1/3 cup parmesan cheese
2 scallions; chopped
1/2 lb penne pasta; cooked

In a large saucepan, melt butter. Whisk in flour and cook, stirring for 1 minute. Reduce heat and cook stirring, 3 minutes or until pale golden. Gradually whisk in milk, broth, mustard and Worcestershire until smooth. Increase heat to medium and bring to a simmer. Stir in tomatoes, salt and pepper; cook, stirring, 5 minutes. Remove from heat and let cool slightly. In a large bowl, combine Jack, parmesan, and cheddar cheeses. Stir 2 cups of the cheese mixture, scallions and pasta into the saucepan. Pour into a 1 1/2 quart baking dish; sprinkle with remaining cheese. Broil 8 - 10 minutes or until bubbling. Let cool slightly before serving.

Yield: 5 servings
