2 10 oz frozen chopped spinach
1/3 cup onion; finely minced
1/4 cup butter; melted
1 teaspoon salt
1 teaspoon pepper
6 tablespoon heavy cream or evap. milk
6 tablespoon parmesan cheese
3 oz cream cheese
1 louisiana hot sauce
1 buttered bread crumbs
Cook spinach according to package directions. Drain. Saute onion in butter. Add drained spinach, salt and pepper. Pour in milk. Add cheeses and Louisiana hot sauce to taste. Mix well. Place in a baking dish and top with buttered bread crumbs. Bake at 375 for 10 to 15 minutes. Freezes well.
