1/6 cup Milk 2TB plus 2 ts
2 large eggs
1 large egg yolk
1/2 teaspoon Salt
1/8 teaspoon nutmeg
1 cup unbleached flour
1/4 cup Butter

Blend milk, eggs, yolk, salt , and nutmeg in a mixer. Add flour and mix untill smooth and thick. Stopping once to scrape down sides of bowl. Transfer to a bowl. Cover with plastic. Let stand for at least 30 minutes or up to 2 hours. Bring a large pot of salted water to a boil. Hold a sieve (grater) with 1/4 inch holes over the pot. Using a plastic or rubber spatula, press dough through holes into water. Boil until spaetzle float to surface, 20 to 30 seconds. Using a slotted spoon, transfer to a collander to drain. Melt butter in a skillet over medium-high heat. Add spaetzle and toss untill heated through and lightly browned.

Yield: 4 servings
