Twice Baked Potatoes

2 baking potatoes
1/4 cup butter; softened
1/4 cup sour cream
1 tablespoon chopped chives
2 tablespoon bacon bits
1/4 cup shredded cheddar
1 salt and pepper to taste
Scrub the potatoes; coat them with butter and salt. Bake them for about 1 hour or until done. Allow potatoes to cool for 15 minutes. Slice 1/2 inch across the top. With a spoon, scoop out the potato, being carefull not to break the skin. Place the potato meat in a bowl. Add butter, sour cream, chives, and salt and pepper to taste. Whip the mixture with a beater until light and fluffy. Refill the potato skins and sprinkle with bacon bits and cheddar cheese. When you have filled the potatoes, place the remainder of the potato mixture in a pastry tube and decorate the tops. Reheat the potaotes in a 350 degree oven for 10 minutes before serving. The stuffed potatoes can be frozen and used whe needed.
