Cheesy Pancake Brunch *** 1/2 Jan. 95

1 tablespoon butter
2 tablespoon whole wheat flour
1 1/3 cup milk
1/2 cup cheddar cheese; shredded.
2 dash cayenne pepper
2 tablespoon dry white wine; more to taste
2 dash paprika
1 can french style green beans
1/2 lb bacon
6 pancakes (aunt jemima etc.)
Cut bacon into 1 inch slices and cook until done but not crisp. Drain the fat and reserve 2 or 3 tablespoons. Drain the beans and put into a saucepan with the bacon and bacon fat. Heat this through and keep it warm. Melt butter in another saucepan and add the flour. Cook over low heat for about 1 minute and then gradually add the milk, stirring constantly. Cook, stirring constantly for a few minutes and then add the cheese, wine, paprika, and cayenne. Prepare pancakes according to the directions. Pour equal amounts of the bean and bacon mixture onto each pancake and roll them up. Pour cheese sauce over top. This could also be made with crepes instead of the pancakes.
