Cheese Sauce

1/8 cup butter
1/8 cup flour; unsifted
3/4 cup milk
3 oz shredded velveeta
1/4 cup beer
1/4 teaspoon salt
1/4 teaspoon dry mustard
1/16 teaspoon cayenne pepper
In a large saucepan, melt butter; blend in flour. gradually stir in milk. Cook over medium heat, stirring constantly until mixture thickens. Add cheese, beer, salt, dry mustard, and Cayenne; cook and stir until cheese melts and mixture is smooth.
Yield: 3 servings
