Corn and Green Chile Rice #687 3/04

1 cup uncooked long grain white rice
1 cup cottage cheese
1 11 oz cans mexicorn/ red & green peppers
1 8 oz carton sour cream
1 4.5 oz can chopped green chilies
6 oz shredded mexican cheese blend

Cook rice as directed on package. Heat oven to 350°F . Spray a 2 quart casserole with Pam. In a large bowl, combine cooked rice and all remaining ingredients except for the Mexican cheese blend: mix well. Pour into the casserole. Sprinkle with the cheese. Bake for 35 minutes or until the cheese is melted.
