Cheeseball With Everything ****

2 cup swiss cheese; shredded
2 cup cheddar cheese; shredded
1/2 cup sour cream
8 oz cream cheese; softened
1/2 lb bacon; crisp & crumbled
1/2 cup onion; finely chopped
1/2 cup pecans; finely chopped
2 oz pimiento; diced
2 tablespoon sweet pickle relish
1 dash salt
1 dash pepper
1/4 cup parsley; snipped
1 tablespoon poppy seed
1 pkg crackers; assorted

Bring cheese to room temperature. In a large mixer bowl beat together the cream cheese and sour cream until fluffy. Beat in swiss cheese, cheddar cheese, half of the bacon, onion, half of the pecans, undrained pimiento, pickle relish, salt and pepper until combined. Cover and chill several hours or until firm. In a small mixing bowl combine remaining bacon, pecans, parsley, and poppy seed. Shape cheese mixture into a ball and roll in the bacon mixture. Wrap tightly and chill. Let cheese ball stand at room temperature for about thirty minutes before serving. Serve with crackers. Rating - ****
