1 1/2 tablespoon butter
2 1/2 tablespoon flour
1 cup chicken broth
1 teaspoon lemon juice
1/3 cup cream
1 egg yolk
1 salt & pepper to taste
2 slices toasted bread
1/4 lb bacon; cooked crisp
1/4 lb sliced turkey
1 parmesan cheese
Make a white sauce of butter, flour, chicken broth and lemon juice. Beat egg yolk and and cream together and add to sauce. Season with salt and pepper. In individual ramekins, top a slice of toast with turkey and bacon. top with sauce and sprinkle with parmesan cheese. Broil until top browns.
Yield: 2 servings
