Fudge Filled Sandies #685 2/04

1 cup Butter; softened
3/4 cup confectioners sugar
1 teaspoon Vanilla
2 cups flour
1 cup finely chopped pecans
addl confectioners sugar -----FILLING-----
3/4 cup semisweet chocolate chips
2 tablespoon light corn syrup
1 tablespoon water
1 tablespoon Butter

In a mixing bowl, cream butter and sugar. Beat in vanilla. Gradually add flour to the creamed mixture; fold in the pecans. Roll into 1 inch balls. Place 1 inch apart on ungreased baking sheets. Make an indentation in the center of each cookie. Bake at 325°F for twenty minutes or until ligtly browned. Roll warm cookies in confectioners sugar; cool on wire racks. Melt chocolate chips in a saucepan over low heat; stir in remaining filling ingredients until smooth. Spoon into colled cookies. These cookies even without the chocolate are the best sandies I have tasted.
