1 lb lean ground beef
1 each small egg
1 tablespoon dijon mustard
1 teaspoon minced garlic
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup chopped onion
1/4 cup white wine (zinfandel) etc.
2 tablespoon beef broth or boulion
1/2 cup heavy cream
1/2 teaspoon thyme
In a large bowl mix beef, egg, mustard, garlic, salt, and pepper until blended. Shape into four 1/2 inch patties. Cook until almost done and remove from pan. Cook onion in drippings until golden and wilted. Add wine and broth, stirring to scrape up browned bits. Bring to a boil and boil for about 3 minutes or until about half of the liquid has evaporated. Stir in the cream; return to boil. Boil about 3 minutes stirring once or twice until thickened. Stir in the thyme. Return burgers to the skillet and heat through. Serve with some of the sauce spooned on top. These are very good served over hash brown patties.
