1 onion
1 egg; beaten
2 large potatoes (1 1/2 lbs)
3 tablespoon flour
1 teaspoon salt
1/4 teaspoon pepper
1/4 cup salad oil
1 sour cream; for a dip
Peel potatoes. Shred potatoes and onion into a large bowl half filled with cold water. This will keep the potatoes from darkening. In a colander lined with a clean towel drain potatoes and onion. Wrap potatoes & onion in towel and squeeze to remove as much water as possible. In same large bowl beat egg; return potato & onion; add flour, salt and pepper; toss until well mixed. In a large skillet over medium heat, in the salad oil, drop potato mixture in 1" balls. Flatten slightly and cook until golden brown on one side; turn and brown on other side. Remove to paper towels to drain. Serve with sour cream for a dip. This might also be good with a little hot pepper, etc. added.
