2 tablespoon olive oil or bacon fat
1 medium onion; finely chopped
1 1/2 lb ground beef
3 large eggs
4 dash louisiana hot sauce
1/2 cup dried bread crumbs
1 teaspoon Salt
1/2 teaspoon cumin
1 large clove minced garlic
1/2 teaspoon nutmeg
1 tablespoon parsley
cooking oil -----Red Chile Sauce-----
4 tablespoon Butter
4 tablespoon flour
3 cup beef broth
1/2 cup red wine
1/2 teaspoon crushed red chiles
1 teaspoon Salt
1 teaspoon pepper

Heat the oil or fat in a frying pan, and cook the onion until soft. Mix the ground beef and onions together in a mixing bowl. Lightly beat the eggs and add to the meat mixture. Stir in the hot sauce, bread crumbs, salt, garlic, nutmeg, and parsley and form into balls about the size of walnuts. Fry the meatballs in cooking oil over medium heat until well browned and done through. Place meatballs in Red Chile Sauce and serve over rice. Yields 56 meatballs. Red Chile Sauce: Melt the butter, stir in the flour and stir constantly, let the flour brown slightly. Slowly stir in the beef stock and wine. Stir until the sauce starts to thicken, then turn down the heat to simmer. Stir in the garlic, chile, salt and pepper. Heat through. You may have to thicken this with some cornstarch mixed with cold water. This is also good with some sweet and sour sauce added to it.

Yield: 5 servings
