Summer Fruit Salad or Dip #656 5/03

6 tablespoon Sugar
2 teaspoon cornstarch
1/8 teaspoon Salt
1/2 cup pineapple juice
2 tablespoon orange juice
1 medium egg; slightly beaten
1 3 oz. cream cheese

4 cups assorted fruits
strawberries, pineapples, peaches
In a small saucepan, combine the sugar, cornstarch and salt. Stir in the juices until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from heat. Stir a small amount into the egg. Return all to the pan, cook and stir constantly until mixture is thickened. Remove from the heat. Cool slightly. In a small mixing bowl, beat cream cheese until smooth. Gradually add the juice mixture; mix well. Cover and refrigerate. In a large bowl, combine the fruits. Sprinkle with sugar; toss to coat and put in fridge to marinate. Serve in individual bowls with a dollop of dressing on top. This would also make a good fruit dip. Fruits that you could use: bananas, strawberries, grapes, pineapple tidbits, peaches, blueberries, raspberries.
