Apricot Gelatin Salad **** 8/97

6 oz orange gelatin
2 cup boiling water
20 oz can crushed pineapple
8 oz cream cheese; softened
15 oz can apricot halves; drained
1 and chopped
1/2 cup chopped walnuts
8 oz cool whip, thawed
1 additional chopped walnuts
In a bowl, dissolve gelatin in the water. Drain pineapple, reserving the juice. Add pineapple to the gelatin and set aside. In a mixing bowl, beat cream cheese and pineapple juice until smooth. Stir in gelatin mixture; chill until partially set, stirring occasionally. Stir in apricots and walnuts. Fold in whipped topping. Pour into a 13X9X2 dish. Sprinkle with additional walnuts. Chill until firm.
