Greek Potatoes **** 5/96

1/4 cup olive oil
1/2 cup calamato olives or ripe
10 cloves garlic; peeled
1 1/2 tablespoon tomato paste
1 teaspoon salt
1/2 teaspoon oregano
1/2 teaspoon pepper
6 red potatoes (1 pound)
1 cup water
In a large skillet, heat oil over medium low heat; add garlic and olives. Cook until garlic softens - about five minutes. Stir in tomato paste, pepper, oregano, and salt. Peel and cut potatoes into 1 inch cubes. Add potatoes to garlic mixture and cook 3 minutes, stirring. Add water and heat to boiling over high heat. Reduce heat to medium-low; cover and simmer, stirring occasionally, until potatoes are tender and water evaporates - about 30 minutes.
