Pork & Apple Stir Fry 2/95 ****

1 7 oz package rice pilaf mix
1 1/3 cup apple juice or cider
1 lb boneless pork loin
1 teaspoon paprika
1 teaspoon thyme
1/2 teaspoon sage
1/2 teaspoon salt
2 tablespoon butter
2 apples; peeled & sliced
1 teaspoon cornstarch
1/2 cup chopped walnuts

Prepare rice pilaf as package directs, substituting 1 cup of apple juice or cider for 1 cup of the water. While pilaf is simmering, cut pork into 1 1/2 by 1/4 inch strips. Combine seasonings and toss with the meat. In a large skillet or a WOK, melt the butter over high heat. Stir fry meat for 3 to 4 minutes or just until no longer pink. Add apples; Stir fry 2 to 3 minutes or until apples are tender crisp. Add combined remaining apple juice and cornstarch. Stir fry 1 to 2 minutes or until thickened to form glaze. Stir in nuts and serve over the rice pilaf.

Yield: 4 servings
