Taco Pizza **** 7/96

1 1/4 cup cornmeal
1 1/4 cup all purpose flour
2 teaspoon baking powder
1 1/2 teaspoon salt
23 cup milk
1/3 cup melted butter
1/2 lb ground beef
1/2 lb pork sausage
6 oz can tomato paste
14 1/2 oz can diced tomatoes; undrained
1 envelope taco seasoning
3/4 cup water; if needed
12 oz cheddar & jack cheese; shred
2 cup chopped lettuce
1 cup diced tomato
1/2 cup sliced ripe olives
1/2 cup sliced green onions
1 sour cream; for garnish

In a medium bowl, combine the cornmeal, flour, baking powder and salt. Add milk and melted butter; mix well. May have to add a little more milk. Press into bottom and sides of a 12 to 14 inch pizza pan. Bake at 400 for 10 minutes or until edges are slightly brown. Cool. In a large skillet, brown beef and sausage; drain. Stir in tomato paste, canned tomatoes, taco seasoning and water if needed; bring to a boil. Simmer, uncovered, for five minutes. Spread over crust. Combine cheeses and sprinkle over the meat layer. Bake at 400 for 15 minutes or until cheese melts. Top with lettuce, tomato, olives, onion, and some sour cream; if desired.

Yield: 6 servings
