1/4 cup orange juice
1/4 cup white wine vinegar
4 garlic cloves; minced
1 teaspoon seasoned salt
1 teaspoon oregano
1 teaspoon cumin
1/4 teaspoon cayenne pepper
1 lb boneless beef sirloin steak; cut into strips
1 medium onion; thinly sliced
1 medium green pepper; thinly sliced
1 medium sweet red pepper; thinly sliced
2 tablespoon vegetable oil; divided
6 10 inch flour tortillas; warmed
shredded cheddar cheese; optional
picante sauce; optional
sour cream; optional
In a large resealable plastic bag, combine the first seven ingredients; add the beef. Seal the bag and turn to coat. Let it marinate for an hour or so turning occasionally. In a skillet, saute onion and pepper in 1 TB. of the oil until crisp tender; Remove and set aside. Drain and discard marinade. In the same skillet, cook beef in remaining oil for 2 to 4 minutes or until it reaches the desired doneness. Return vegetables to the pan and heat through. Sppon meat and vegetables onto tortillas. If desired top with cheese, picante sauce or sour cream. Or ALL of the above. This goes good with the Green Chile Rice #564.
