Butterscotch Bread #567 4/01

2 cups flour
1 cup brown sugar; firmly packed
1 cup buttermilk
1 egg
1 1/2 tablespoon butter; melted
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup golden raisins or chopped nuts

Preheat oven to 350 degrees. Spray a 9 X 5 loaf pan with Pam. Combine all ingredients except raisins in a large mixer bowl. Beat at low speed, scraping bowl often, until well mixed (2 to 3 minutes). Stir in raisins by hand. Spoon batter evenly into pan and bake for about 50 minutes or until a toothpick inserted in center comes out clean. Let stand for 10 minutes. Remove from pans. Cool completely. If you don't have any buttermilk, you can substitute 1 TB. vinegar and enough milk to equal 1 cup.
