Memmie's Spoonbread 5/95 ****

1 1/2 cup boiling water
1 cup corn meal
1 teaspoon salt
2 tablespoon butter
1 cup milk
2 large eggs; lightly beaten
2 teaspoon baking powder

Pour water over cornmeal gradually, stirring until smooth. Add salt and butter, stirring until blended; cool ten minutes. Gradually stir in milk and eggs. Add baking powder, stirring until blended. Pour mixture into a 1 1/2 Qt. baking dish. Bake at 375 for 45 minutes or until lightly browned.

Yield: 6 servings
