Butternut Squash Bake **** 9/97

1/3 cup butter; softened
3/4 cup sugar
2 eggs
5 oz can evaporated milk
1 teaspoon vanilla extract
2 cup butternut squash; cooked
1 and mashed

1/2 cup rice krispies
1/4 cup brown sugar
1/4 cup chopped pecans
2 tablespoon butter; melted
In a bowl, cream butter and sugar. Beat in eggs, milk, and vanilla. Stir in the squash (mixture will be thin). Pour into a greased 8" X 8" baking dish. Bake, uncovered at 350 for 45 minutes. Combine topping ingredients; sprinkle over casserole. Bake 10 minutes longer. Double the topping mix for a richer dish.
