Country Chicken Tetrazzini **** 8/97

4 chicken breasts, chopped 1
1 small onion; chopped
16 oz fresh mushrooms; sliced 1/4
3 tablespoon all purpose flour
1/4 cup dry sherry
1 cup whipping cream
8 oz linguine
8 oz shredded cheese; 4 cheese
1 country casserole blend
1 we tried pizza blend: very
1 good, but very sticky.
1 salt and pepper to taste
Cook linguine and drain. Add a little butter and stir to prevent it from sticking. Saute chicken in some butter in a large pan over medium high heat for about five minutes. Add onions and mushrooms; saute two more minutes. Add flour; cook, stirring constantly for 1 minute. Gradually stir in sherry and whipping cream; cook, stirring constantly, three minutes or until thickened. Remove from heat and toss with pasta and cheese. Add salt and pepper to taste.
Yield: 4 servings
