Pumpkin Bread Pudding #639 11/02

1 cup brown sugar
3 cups milk
1 teaspoon Cinnamon
1 teaspoon vanilla
1/2 teaspoon ground nutmeg
3 large eggs
1 15 oz can pumpkin; NOT pie mix
6 cups bread cubes
1/2 cups currants or raisins
1/2 cups pecans; chopped
16 pecan halves (optional)
1 ice cream or whipped cream for topp

Heat oven to 350°F . Grease a 10 inch springform pan. Mix brown sugar, milk, cinnamon, vanilla, nutmeg, eggs, and pumpkin in a large bowl until well blended. Stir in bread cubes, currants, and chopped pecans. Let stand for 10 minutes; spoon into pan. Arrange pecan halves on top of pudding. Bake 50 to 60 minutes or until knife inserted in center comes out clean. Let stand for 10 minutes; remove side of pan. Serve warm with ice cream or whipped cream.

Yield: 8 servings
