Glazed Roast Pork With Apples #637 11/02

1 1 lb pork roast
1/2 teaspoon Salt
1/2 cup red wine vinegar
1/2 cup Sugar
1/3 cup Water
1/4 cup ketchup
2 tablespoon soy sauce
1 tablespoon cornstarch
1 1/2 teaspoon hot pepper sauce
1 large onion; sliced 1/4 inch
2 tablespoon Butter
1 tablespoon veg. oil
2 large red cooking apples; cored, peeled, & sliced

Preheat oven to 325°F . Sprinkle roast with salt; place fat side up in open roasting pan. Roast pork for 1 1/2 hours. Meanwhile, combine the red wine vinegar, sugar , water, ketchup, soy sauce, cornstarch, and pepper sauce in a two quart saucepan. Cook over mediu heat until mixture thickens; stirring constantly. Boil one minute. Remove from heat and set aside half of the sauce mixture. During the last 30 minutes of roasting time, brush pork several times with half of the sauce mixture. When the pork is finished cooking, let it stand for fifteen minutes for easier carving. Cook onion in butter and oil in a 12 inch skillet over medium heat for ten minutes, stirring occasionally. Add apple slices; cook five more minutes or until apple and onions are tender. Add the other half of the sauce mixture and stir. Cut up the pork on a bed of rice and put the onion mixture over top.
