Spiced Apple-Butter Pork Roast #632 10/02

2 lb boneless pork loin
1 1lb 13oz jar apple butter
1/4 cup brandy
2 tablespoon apple juice
2 tablespoon red wine vinegar
2 tablespoon lemon juice
2 tablespoon horseradish
1 teaspoon dijon mustard
1/4 teaspoon Salt
1/4 teaspoon cousely ground pepper
Place roast in a 1 gal. zip top plastic bag. Combine remaining ingredients in a bowl; stir well. Reserve two cups of the mixture; cover and chill. Pour remaining mixture over the roast; seal bag and marinate in the refrigerator 8 hours. Preheat oven to 350°F . Line a shallow roasting pan with heavy duty aluminum foil. Remove roast from bag; place roast in prepared pan and pour marinade over top. Bake for 1 3/4 hours, basting occasionaly. Slice meat and serve over couscous or rice and top with apple butter mixture which has been heated.
