Chicken In Potato Crust #628 9/02

2 chicken breasts, boned,; cut into fingers
1 cup instant potatoes
1 large egg; beaten
1 teaspoon Salt
1 teaspoon paprika
1/2 teaspoon pepper
Cut chicken in pieces, roll in egg. Sprinkle with salt, pepper, and paprika. Roll chicken into instant potatoes. Cook in hot oil about 1/2 inch deep. Turn about 3 to 4 minute intervals until done, browned on all sides. Cooking time about 8 minutes.
