Stuffed Pork Chop **** 9/97

2 tablespoon boiling water
2 tablespoon raisins
1/4 cup celery; diced
2 tablespoon onion; diced
1 egg; beaten
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon bacon fat
1 1/4 cup corn bread crumbs
3 center cup pork chops; 1 1/4
Pour water over raisins; set aside. In a saucepan, melt one tablespoon bacon fat, add celery and onion. Cook and stir for two minutes; remove from heat. In a medium bowl, combine egg, salt, pepper, bacon mixture and raisins. Stir in crumbs and toss lightly. Cut a pocket in each chop and insert about 1/3 cup of the stuffing. Place on a rack in a shallow baking pan. Bake at 350 for 1 hour or until meat is no longer pink.
Yield: 3 servings
