Coconut Custard Pie 7/02 #620

2 cups milk
3/4 cup Sugar
1/2 cup Bisquik
4 large eggs
1/4 cup Butter; softened
1 1/2 teaspoon vanilla
1 1/2 cups flaked coconut

Combine milk, sugar, Bisquik, eggs, butter, and vanilla in a blender. Cover and blend on low speed for 3 minutes. Pour into a greased 10 inch pie plate. Let stand for 5 minutes; then sprinkle with the coconut. Bake at 350 for 45 to 50 minutes. Serve warm or cold.
