1/2 cup flour
1/2 tablespoon sugar
1/16 teaspoon nutmeg
1/4 teaspoon cinnamon
1/8 teaspoon salt
2 eggs
1/2 cup milk
2 tablespoon butter
powdered sugar; for garnish
----FRIED APPLES----
1 1/2 small McIntosh apples; thinly sliced
1 1/2 tablespoon butter
1/8 cup sugar
1/2 cup shredded cheddar; to taste
Preheat the oven to 425. Heat an 8 X 8 baking dish while you are preparing the batter. Mix the flour sugar, salt, cinnamon and nutmeg together. Beat the eggs and milk together and add to the flour mixture, blending only until well combined, using an electric mixer, scraping down the sides of the bowl with a spatula. Remove pan from the oven. Put the butter in the pan and swirl to coat as it melts. Pour the batter in quickly and immediately return to the oven. Bake for 15 minutes, reduce heat to 350 and bake for another 15 minutes or until golden brown and puffy. This will be one unusual looking critter but it will taste good. Sprinkle with the powdered sugar and cut into squares. For the apples, cook them in the butter for two or three minutes or until slightly tender; sprinkle the apples with the sugar. Top each serving of pancake with some apples and cheddar cheese. Serve this with a slice of ham, some sausage or some bacon.
