Fried Rice #615 3/02

2 tablespoon oil
1/2 cup pork, chicken, or beef; diced
2 cups rice; cold, cooked
2 tablespoon soy sauce
3 medium mushrooms; sliced
2 medium green onion; sliced
1 large egg; beaten
Lightly fry meat in the oil. Add remaining engredients except for the egg. Fry over low heat for 6 minutes. Add egg and fry for 5 minutes more. Add additional soy sauce to taste. This is not a make ahead meal. Do it all at the last minute so that it remains moist.
