Scottish Shortbread #614 3/02

1 cup Butter; softened
1 cup margarine; softened
1 cup powdered sugar
4 cups flour
1/2 teaspoon Baking Powder
1/4 teaspoon Salt
sugar for top
Beat butter and margarine at medium speed in a mixer until creamy; gradually add sugar, beating well. Combine flour, baking powder, and salt; add to creamed butter mixture. Mix at low speed until dough is well blended. Turn dough out onto a well floured surface; knead ten times. Shape on a Pammed cookie sheet into a 10 X 15 inch rectangle. Pierce dough with a fork at rwo inch intervals. Bake at 300°F for 1 hour. Cut immediately into 2 1/2 X 1 inch pieces. Cool on pan 10 minutes; remove to a wire rack to cool completely.
