Pork Chop Loaf #610 2/02

3 pork chops
1/2 large loaf of bread; trimmed
1/2 medium onion; chopped
1/2 large stalk celery; chopped
3/8 teaspoon thyme
1/2 teaspoon sage
3/8 teaspoon pepper
1/2 stick Butter; melted
-----Candied Apples-----
4 tablespoon Butter
3 medium delicious apples
1/2 cup Sugar
1 teaspoon Cinnamon
Preheat oven to 350°F . Cut bread into 1/2" cubes. In a medium bowl, combine onion, celery, and bread cubes. Add thyme, sage and pepper to the melted butter and sprinkle over the bread cube mixture. Mix thoroughly. Place a pork chop at one end of a loaf pan, fat side up. Alternate stuffing and chops ending with a chop. Bake 1 hour. Garnish with candied apple slices.
Candied Apples: Core apples but do not peel. Cut into slices. Melt butter in a large pan. Add apples, tossing and stirring to coat thoroughly. Sprinkle sugar and cinnamon on top of apples. Bring to a simmer, stir gently and lower heat. Stir occasionally, but do not mash or break up apples. Cook until apples are tender. Serve over pork chops and dressing.
