Zesty Beef & Bean Wedges 2/00

1 lb ground beef
1 can 15 oz chile beans; drained
1 cup Cornbread stuffing mix
1 tablespoon lemon juice
1/8 teaspoon pepper
4 oz pepper Jack cheese; shredded
sour cream for topping
1/4 cup chives for garnish; sliced
1/2 teaspoon dried, ground, hot chilis

Heat oven to 375. Combine ground beef, beans, stuffing mix, lemon juice, pepper and chilis in a large bowl, mixing lightly but thoroughly. Spread mixture in a 12 inch pizza pan. Bake for 15 to 25 minutes till done. Sprinkle with the cheese and continue baking for 2 or 3 minutes until cheese is melted. Top with the sour cream and sprinkle with chives.
