Waffle Breakfast Strata #551 1/4/01

1/2 lb pork sausage; browned & drained
3 frozen waffles; toasted & cubed
1 cup shredded cheddar
3 eggs; slightly beaten
1 cup milk
1/2 teaspoon dry Mustard
1/8 teaspoon pepper
frozen waffles; toasted
maple syrup

Cook sausage until brown; drain. Arrange 1/2 of the waffles in a 1 quart square baking dish. Top with 1/2 of the sausage and 1/3 cup of the cheese. Repeat layers. Combine eggs, milk, mustard, and pepper. Pour over layers in dish. Cover and chill in refrigerater for at least 4 hours or up to 24 hours. Bake at 350 for 50 to 60 minutes or until knife inserted at middle comes out clean. Sprinkle with remaining cheese. Let stand for ten minutes before serving. Serve on toasted waffles and drizzle with maple syrup.
