Twice Baked Ranch Potatoes 1/00

4 baking potatoes
1/2 cup ranch dressing
1/4 cup sour cream
1 tablespoon bacon bits
4 oz Velveeta; cut up
2 tablespoon fresh chives; chopped

Scrub potatoes, blot dry, and rub the skin with a little oil and salt. Stand them on end in a muffin tin. Bake at 400 for one hour or until tender. Slice tops off of potatoes; scoop out centers, leaving 1/8 inch shell. Mash potatoes. Add dressing, sour cream, and bacon bits. Beat until fluffy. Stir Velveeta into potato mixture. Spoon into shells. Bake at 350 for 20 minutes. Garnish with fresh chives or the green part of sliced green onions.
