Tomato Aspic 5/95 ****

14 oz tomato juice
1 celery stalk; cut up
1 onion; cut up
1 tablespoon lemon juice
1/2 teaspoon basil
1/2 teaspoon sugar
1/2 teaspoon salt
1 dash cayenne
1 envelope unflavored gelatin
1 tablespoon regina red wine vinegar
1 tablespoon water
1 cottage cheese

Combine tomato juice with vegetables and seasonings in a saucepan. Cover and simmer for twenty minutes. Strain. Add gelatin softened in vinegar and water and stir until dissolved. Put about one or one and one half inches of cottage cheese into a cocktail glass and pour the tomato mixture into a spoon over the cottage cheese to almost fill the glass. Chill until firm.

Yield: 6 servings
