Sweet N' Sour Pork **** 2/92

2 lb pork roast
1/2 cup celery; chopped
1/2 cup onion; chopped
1/2 cup green pepper; chopped
2 tablespoon cooking oil
3/4 cup pineapple juice
1 tablespoon corn starch
3 tablespoon soy sauce
3 tablespoon wine vinegar
1/4 cup crushed pineapple
1 cup pineapple chunks; drained

Cut pork into 1" cubes. Spread on a shallow pan and bake for 45 minutes at 350 degrees. Mix celery, onions and green pepper, saute lightly in the oil. Add remaining ingredients. stir, combine with the pork in a caserole and bake for 30 more minutes at 350 degrees. Serve over cooked rice.

Yield: 6 servings
