Southern Style Creamed Chicken 8/99

1/4 cup onion; chopped
1 1/2 tablespoon butter
1 tablespoon flour
1/4 teaspoon salt
1 dash cayenne
3/4 cup milk
1 cup cheddar; shredded
2 tablespoon hellman's mayo.
3/4 cup chicken; chopped, cooked
1/2 pkg 10 oz. frozen peas
2 eggs; hard cooked, sliced
3 oz mushrooms; sliced
3 corn bread squares

Saute onion in butter. Blend in flour and seasonings. Gradually add milk; cook, stirring constantly, until thickened. Add cheese; stir until melted. Blend in mayonnaise. Add chicken, peas, eggs, and mushrooms; heat thoroughly. Serve over corn bread. For the corn bread, use Hinks corn bread (MM 257).

Yield: 3 servings
